Cook the potatoes in boiling water.
In a food processor or a blender, pulse the paprika, sugar, garlic, onion, tomatoes and salt.
Pour a stream of olive oil in a pan and transfer the contents of the food processor to the same pan.
Cook for 5 to 6 minutes.
Transfer the potatoes to a deep dish, season with salt and pour the sauce over it.
Finish with minced parsley.

Tried this for the first time as a party appetiser. Everyone was seriously impressed. So tasty, healthy and easy!
